Roasted Butternut and Tomato soup
As the days get colder and the night longer we are definitely heading into soup season in the Southern Hemisphere. As you are probably aware I am all about the easiest suppers ever and this recipe ranks highly for that very reason!! It is a delicious, healthy, quick soup perfect for warming up winter. And best of all the ingredients are usually ones you have in the house so no racing to the shops at 6:30!
Roasted Butternut and Tomato soup
Ingredients
1 large Butternut squash
1 large onion
2 or 3 tomatoes
A few cloves of garlic
A splash of olive oil
1 litre chicken or vegetable stock
Seasoning – mixed herbs, salt, pepper etc
Method
Cut up the butternut, onion and tomatoes and place on a baking tray.
Add a few cloves of garlic and splash of olive oil and season to taste.
Put in the oven at 180 C for 20 – 30 mins.
Move into a pot on the stove top and blend with a stick blender.
Slowly add chicken stock (you can add some earlier to make blending easier)
Depending on how thick you want the soup add more or less chicken stock.
Simmer on the stove top for a few minutes until warm.
Pour into bowls. Add a dollop of cream and garnish (as required but not necessary)
Serve with warm, crusty ciabatta bread and real butter! YUM
This is one of my children’s favourite meals and there are never any left overs… but if you are cooking for one you might do and it’s a great option to take to the office for lunch or freeze and reheat later in the week.
