In Cape Town we might have been relishing the long summer we were blessed with but after this weekend there is no doubt that winter is upon us! WOW what a weekend we’ve just experienced here in the Cape! So, what’s the best way to embrace the cold weather? With comfort food of course! Nothing beats a cosy fire, glass of wine and warm winter meal…. bring on the stews, soups and stroganoff’s!
One of our favourite family meals for winter is Beef Stroganoff. This particular recipe serves 4 and is low sodium which is ideal for young kids and those with high blood pressure.
Flour for dusting
500g beef fillet, cut into strips
30ml olive oil
30g unsalted butter
250g white mushrooms, finely sliced
250g red peppers, sliced
1 onion, chopped
30ml MAGGI LAZENBY Worcestershire sauce
250ml boiling water
250ml NESTLÉ IDEAL cook-in milk mushroom and garlic flavour
Freshly ground black pepper
30ml flat leaf parsley
Dust beef strips lightly in flour. Heat a frying pan and add oil and half of the butter. When foaming, add the beef and fry for 2 – 3 minutes on both sides, until browned all over. Remove and set aside.
Using the same frying pan, add the remaining butter. Fry the onion for 2 -3 minutes until softened.
Add the mushrooms and red peppers and cook for 1 – 2 minutes. Add the Worcestershire sauce, mustard and paprika and cook for 1 minute.
Add the water and bring to the boil. Reduce the heat and simmer for 3 – 4 minutes.
Add the cook-in milk and mix well. Return the beef to the pan and cook for one minute.
Add black pepper and parsley and serve with brown rice or pasta.
